5 Tips for Cooking Eggs

1. Scrambled and Omelets: To make great rich and creamy scrambled eggs or omletes, add a couple spoonfuls of either sour cream, cream cheese or heavy cream into the bowl and then beat to combine and cook as normal.  Need an even faster omelet?  Try this microwaved version!

 2. Need a great grab and go breakfast?  Try hard boiled eggs.  The only downside is peeling.  But what if I can make that easier.  Try these two easy tip to make peeling the eggs easier.  Eggs that are a little bit older are actually easier to peel, and to make it even easier:

  • Add the eggs to a cold pot.
  • Cover the eggs with cold water (at least an inch higher than the eggs)
  • Add 1 tablespoon of salt and 1/2 tablespoon of baking soda to the water. (he salt helps the proteins in the eggs coagulate, which means they become firm and are more likely to seal if they crack in the pan. The addition of baking soda aids in removing the shells from the eggs when they finish boiling)
  • Put the pot on the heating element.  Turn it on the heat to medium high.  Bring to a boil cook for 15 minutes and remove from heat.
  • When they are done, submerge them in cold water this will help to cool the egg and the yolk should not get discolored.

3. For great poached eggs that don’t spread into webs of egg white, follow these instructions. Fill your pan with water add about a 1/4 cup white wine vinegar to the water, then bring the water to a full boil before adding the cracked egg to the water. The vinegar will help to keep the egg together. Cook to desired doneness.

 4. Sunny Side Up: If you like soft yolks and cooked egg whites when cooking eggs sunny side up, then try this. After adding your eggs to the pan add 1-2 Tablespoons of water to the pan, and cover with a lid til the egg is cooked to your desired doneness. The egg white will steam leaving the yolk soft as long as you don’t leave it on the heat too long!

 5. Avoid using cold eggs in recipes that call for eggs! Often when cooking with eggs they should be at room temperature. But how often are our eggs in the fridge when we need a room temperature egg, pretty much always at my house? If you know the recipe you are working on calls for eggs. While collecting your other ingredients, place the eggs you need to use in a bowl of warm water for 10 to 15 minutes to warm them up!
